This dish showcases tilapia’s outdoorsy side and the bright, fresh flavor of mangos in tropical tacos that are perfect for lunch with friends or a light dinner. Brushing the delicate fillets with a spiced lime vinaigrette seals in their juices and intensifies the flavor of the tacos.

Grilled Tilapia Tacos with Mango Salsa

Preheat barbecue grill to medium-high.
Salsa
1 cup chopped fresh or thawed frozen mango
½ cup chopped red bell pepper
½ cup packed fresh cilantro leaves, chopped
¼ cup finely chopped red onion
¼ teaspoon fine sea salt
1 Tablespoon freshly squeezed lime juice
Tacos
1 teaspoon ground cumin
½ teaspoon chili powder
¼ teaspoon fine sea salt
1 Tablespoon freshly squeezed lime juice
2 teaspoons vegetable oil
4 skinless farmed tilapia fillets
4 8-inch whole wheat tortillas, warmed
2 cups shredded purple or green cabbage
Salsa: In a small bowl, combine mango, red pepper, cilantro, red onion, salt and lime juice.
Tacos: In a small cup, whisk together cumin, chili powder, salt, lime juice and oil. Brush on both sides of fish, coating evenly.
Grill fish on preheated barbecue, turning once, for 2 to 3 minutes per side or until fish is opaque and flakes easily when tested with a fork. Flake fish into small pieces.
Fill warmed tortillas with fish, cabbage, and salsa.
Serves 4.
With roasted vegetables, goat (or herb) cheese, and some grated Parmesan, this flat bread recipe is perfect for a party, brunch, or to accompany a salad.

Ok, I admit: this recipe isn’t “Top Secret”. The only secret is that it’s HOMEMADE (i.e. not from a can). Never underestimate the power of homemade chicken soup when your family is sick: The fresh vegetables, the high-quality chicken stock, the loads of garlic & a few dashes of some special “secret” spices combine to make a time-tested, tried-and-true way to get your family back on track during cold season. TIP: Try doubling or tripling this recipe and freeze half of it so you can pull it out when, inevitably, the kids give that nasty cold to You.

Homemade Chicken Soup

1 brown onion, halved and sliced
1 cup baby carrots, roughly chopped (TIME SAVER! Why peel whole carrots?)
2 stalks celery, chopped
LOTS and LOTS of Garlic. Seriously, as much as you can handle. Minced.
4 cups high-quality chicken stock. Do NOT use bouillon. Try Swanson’s Boxed Stock.
1 14-ounce can low-sodium vegetable broth
1 teaspoon dried oregano
1 teaspoon dried thyme
1 dash ground cumin
1 dash ground cayenne
1 Tablespoon olive oil
Sea salt and fresh cracked black pepper, to taste
In a large stock pot, add olive oil and sauté onions, carrots and celery. Salt lightly. Cook until tender, about 5 minutes. Add garlic, cook 1 minute more. Pour in chicken and vegetable broth. Bring to a boil and reduce heat to simmer. Crush dried spices in hand and add to pot. Add a dash of cumin and a dash of cayenne (this will add just enough kick to help open up the sinuses), simmer for about 15-20 minutes. Taste. Add sea salt and black pepper if desired. Notice there’s no actual chicken in the recipe? That’s because the benefits are in the broth. But if you want to add some chicken for hearty texture, feel free to add some now.
Tip! Kids love chicken noodle soup. If you want to add pasta, one good trick is to buy a fun shaped pasta like wagon wheels or spirals. Buy whole-wheat or Barilla’s high-protein variety if you think your kids will eat it. Cook the pasta directly in the soup. Doing so will help the pasta absorb all that wonderful, healthy broth, so even if they only pick out the pasta, they’ll get some of the benefits too. Don’t be surprised however, if your soup becomes a little murky from the starch.
Today marks the final day of Maine Shrimp season, and we’re all shedding tears. While there will be plenty of these little critters available (both fresh or frozen) in the days ahead, now is the time to chow down on one of Maine’s finest seafood treats.
This Marinated Grilled Shrimp recipe from Jamie of My Baking Addiction is easy to make. With this incredibly mild February weather we are having in Maine, it is a perfect time to fire up the outdoor grill (or an indoor grill, if you’re lucky enough to have one), marinate the shrimp, invite some friends over, and grill up a few pounds of these sweet shrimp for dinner.
