Brown Sugar Fried Tomatoes

This tomato recipe is a delicious nod to summer. Makes a great side dish!

Brown Sugar Fried Tomatoes

4 large ripe tomatoes
½ cup flour
4 Tablespoons unsalted butter
4 Tablespoons light brown sugar
1½ cups light cream
Coarse salt and freshly ground black pepper to taste
Fresh mint, chopped

Slice the tomatoes into ½-inch thick slices. Put the flour in a sieve and sprinkle each tomato slice. Melt the butter in a large skillet over medium heat. Sprinkle 2 Tablespoons of the brown sugar evenly in the pan. Lay the tomato slices, flour side down, on top of the brown sugar in the skillet. Sprinkle the second side of the tomato with the flour and the remaining 2 Tablespoons brown sugar.

Fry the tomato slices until golden, turning once. Pour the cream over the tomatoes and shake the pan to distribute evenly. Season with salt and pepper and cook for about 3 minutes until the cream is thickened. Sprinkle with the mint, and serve warm.

Serves 4-6.
