Salmon & Gazpacho Salsa

Denny and I love salmon and I’m always looking for new ways to prepare it. You can use this salsa on other fish and chicken dishes. I use a Cuisinart griddle. It makes everything fast and easy.

Salmon & Gazpacho Salsa
recipe from Nancy & Dennis Miller, Legends in the Kitchen

Gazpacho salsa:
4 plum tomatoes, diced
1 small cucumber, peeled and diced
3 green onions, chopped
½ cup red onions, chopped
½ yellow pepper, seeded and diced
½ cup red wine vinegar
¼ cup fresh lemon juice
½ cup ketchup
1 teaspoon Worcestershire sauce
¼ teaspoon Tabasco sauce (optional)
Sea salt, fresh ground pepper, garlic salt, paprika, to taste

Combine all ingredients. Lightly brush salmon with 1 Tablespoon melted butter. Sprinkle with fresh parsley, garlic, salt, and paprika.

Preheat griddle or grill. Cook to desired doneness. Spoon refrigerated salsa on top of salmon and serve.

Serves 4-6.
