Radicchio, Avocado, and Grapefruit Salad

You certainly don’t need to use colored gelatins or whipped topping concoctions when this tasty and colorful combination will make the perfect holiday salad. Recipe and photo courtesy of Royal Rose Radicchio.

Radicchio, Avocado, and Grapefruit Salad
2 ruby grapefruit
1 head Royal Rose radicchio, cored and coarsely chopped
2 Tablespoons olive oil
2 Tablespoons lime juice
1 firm-ripe avocado, peeled and sliced
⅓ cup chopped smoked almonds
¼ cup sliced green onion
Salt and pepper

Section grapefruit; set fruit aside and squeeze membrane to release any juice into large bowl. Whisk in oil and lime juice, add radicchio and toss. Divide evenly among flour plates and top with grapefruit sections, avocado, almonds, onion; season to taste with salt and pepper. Serve immediately.

Serves 4.
