Fresh-Squeezed Lemonade

Tidal Falls Lobster Kettle in Hancock has numerous claims to fame, including superb lobsters and a truly knockout view, but their amazingly delicious homemade lemonade might in and of itself be enough to get me there. Biggish chunks of lemon rind make all the difference.

Fresh-Squeezed Lemonade

8 cups water
1¼ cups sugar
1 Tablespoon coarsely shredded lemon zest, plus additional for garnish
1½ cups fresh lemon juice (about 1½ pounds, or 5-7 medium lemons)
Thin lemon slices
Fresh mint

Heat 2 cups of the water in a medium-sized saucepan. Add the sugar and stir until it dissolves. In a large pitcher, combine the sugar syrup with the remaining water, lemon zest, and lemon juice, stirring to blend well. Chill for at least an hour or until ready to serve.

Pour into tall glasses over ice, sprinkle with a little more lemon zest, and garnish with a thin lemon slice and a sprig of mint.

Makes 9 cups.
